If you're not re-gelcoating, think about painting the bilge and the nuts & bolts with several coats when you're done. I did mine in an off-white that is close to the original gel coat color. When I ever do get any rust on the bolts, it should show up easily thru the white paint.
It's been 2 years since I put the stainless nuts on, and no rust yet!
