Thanks Allen. I know all about the volcanoes. Fortunately they used a proper thru-hull fitting for the engine water intake and not a nipple as they did for the head intake and sink/icebox drain.
Here's a picture of the thru-hull from before I mopped up the antifreeze.
I've ordered Marelon seacocks to replace the gate valves I will be using a "dual drain" valve for the engine and another for the sink/icebox with a double barbed ball valve on the icebox side. I've ordered a low profile sort of seacock for the head flush so the hose will come off the side of the valve pointed straight at the hole toward the head.
FWIW, here are pictures of the valves I'm replacing.
