Get 3/4" thick wood

Cut rabbets in the end so the remaining wood fits in the slot in the companionway opening.

Cut beveled rabbets on the top and bottom edges so that the parts will overlap and shed water. The top of the top board should have a bevel on it also so that the hatch will slide over it.

I did a quick sketch of the center board. The view is from the back. The rabbets top and bottom weren't drawn with the bevel in the interest of time.
