as the boat comes into irons or stops. If the boat has any rearward motion, then it would "back" in to the new tack, but then you have to straighten the rudder and let the bow fall off the wind on the new tack. Used to tack a Hobie 14 like that,
Or go to neutral rudder just as the boat comes into the wind, and let it pivot around, if there is not much forward speed. If you hold the rudder hard over and the boat comes into the wind and stops, then it will back up onto your old tack....which is like being in Irons. All the other suggestions are good also.
You need to make your Tack "deliberate" and without hesitaion with the sail trimmed in for windward pointing.
