I follow the same procedure that Victoria described. When my boom was not high enough to clear the gallows, it was because one of the lower sail slides got caught in the mast hinge.
Although we always have to be aware of an accidental jibe, I was very impressed in how stable the Sun Cat is gong down wind in 15-18 knot breezes. The Catboat Association has some super books you can purchase that discuss how to sail a catboat in all conditions and points of sail. Once I raised the center board, reefed the sail, and slackened the gaff halyard to dump wind from the top of the sail, the boat was really stable. I was surfing downwind at 7-8 knots.
