CM26 Swing Keel Cable Replacement

Hola, I found my cable to be pretty trashed, plus the 2" pulley mounted near the winch all bent to snot so I am going to replace the cable & pulley, the winch is fine & its the nice type that has a clutch (it wont go flying down at max spped on me - I hope)..

Question - How do I change the cable on the keel? Get her in the water & do it under water???? also, I assume galvanized cable is bad vs. the current stainless cable thats there.
