I'll bet it's leaking at or near the bolt that holds the swing keel. Have you tried removing the cover to the swing keel - you should inspect the bolt if you plan on keeping your keel? 5 gallons is a lot of water. I had an issue where water was coming in as it was splashing up into the swing keel area only while moving. Instead of draining back into the sea, some water was draining back inside the cockpit and cabin. You may find that it in fact does not run out once on the trailer because it has leaked from above the area where the water has settled and it will just sit there until you remove it.

If this is the case, get inside the cabin and have a partner spray the boat, with a hose, at the areas in question and hopefully you should spot a leak from inside. If not, you could launch it in the water, have someone drive and see if you can spot the source from inside the cabin.
