It is a French product - Joubert Okume BS1088 marine plywood. It is the finest marine plywood in the world, certified by Lloyds of London, and is nearly flawless. It cost me about $75 for a 4x8 foot sheet in 5-ply 6mm thickness.
Okume is also known as Gaboon. It's an African hardwood widely used in Europe over the past century. Okume panels are used extensively by race boat builders, rowing shell builders, and a wide variety of homebuilt aircraft. Okume is light weight and has good bending properties.
I use Minwax Red Mahogany stain, and about 10 coats of marine varnish, wet sanded between coats.
