What size gas cans are you using? I find the plastic 2.5 gallon gas cans to be very convenient. Easy to lift to refill the engine, and when you have to walk to the gas station, one in each hand is an easy balanced load.

When I did this type of trip when I was in my 20's, I found two 5 gallon gas cans worked great. But I wouldn't want to lug those a few miles any more. The worst is the evenrude metal 5 gallon gas tanks. Painful to carry any distance.

What about a folding bicycle (with a rack over the wheel)? Transportation is a great thing, especially when the grocery store is a few miles from the seawall or marina. Full size bicycle is a PIA.

You have a picture of your modified gas cap? Sounds like a great idea.

Solar panels for lights and depthsounder? I find a unisolar 30 watt flexible panel can be lashed on top of my bimini cover, and I never have to think about it. It has always been more then enough to keep my battery fully charged to keep VHF and depthsounder operating during the day and anchor light at night.

Ground tackle? I have found that danforth anchors hold well in mud, but not in the light sand around Florida. A small claw anchor is nice.
