Hi,
There is a double backstay on the large canoe. The rig is shunted, not tacked. The whole sail is reversed end for end to cross the wind and the forestay becomes the new backstay so there are two backstays, one for each tack. The stern becomes the bow and off they go. The outrigger is always to windward because it provide stability from it's weight and not it's floatation.
