It should improve performance. To get the same righting moment using lead located at a lower center of gravity you would use less weight. Less weight means the boat goes faster. When I load a 50 lb reduction into my model, I get .05 knots faster or about 275 feet per hour of sailing. Not a significant distance, but windward ability may also be enhanced with a foil shape. As long as you reduce weight to leave the righting moment the same, the stresses on the boat would be unchanged.
