In my woodworking experience, if you oil something that is it. Until it needs to be re-oiled, then you do it again. If you decide to go the poly route, I agree with Tim. 8 to 10 coats for durability. I have used MinWax Helmsman Polyurathane on what little wood was on my Tanzer Overnighter with good results. I will stick with the teak cooler step on JimDandy for now, however, I am just about finished replacing all top side teak with PlasTeak as the previous owner did a terrible job of maintaining the wood which would mean replacement. So I decided to replace it once and eliminate ongoing maintenance. Eventually, I may do the same thing with the cooler step.
