A method that works and is a lot of fun to figure out, set up and use without going to a lot of expense is "sheet to tiller" steering. I found it in a book called "Self Steering for Sailing Craft (Lechter, 1974) and used it on a Moore 24 and other boats with great success. It is also described at jsward.com/steering.
Essentially if the jib luffs the line from the sheet to the tiller gets looser allowing the bungees to pull the tiller to weather making the boat fall off until the sail stops luffing. When rigged properly the boat sails itself making its own minor adjustments.
