On an A, you can cut as wide as you like, the wider the easier to work. Just figure you need to span the cut hole with some convenient wood scraps (supported from both sides and the trunk) for you to lie on while working. If you cut the sole to within a 1 to 1.5 ft of the hull, your arms will be long enough to reach the edges. Cut closer than that to the bulkheads.
I don't know what width piece you can fit it through the companion way when turned on edge. You should be able to me measure the distance from the threshold to the open hatch and get a rough idea of what will fit through the opening. Then cut it a little smaller since you won't be able to get the angle just right since your piece will be long. The ballast tank is about 83 inches long so if you want to take out a single piece and you cut within about 6 inches of each bulkhead, the piece will be about 6 ft long.
The foam plug in the picture is about the length by which the cleats doesn't reach the hull on each side.
