When I need to reef while in heavy winds, it's normally just a matter of headding towards the wind so the mainsail will not blow all over the place other than flapping like a flag.
After that, I start to release the halyard and carefully lower the main about a foot. Then I tie off the halyard and wind the main on the boom. Then just redo everything as necessary.
When the wind is not blowing so hard you can let the main down a larger amount, possibally all at once. The important thing is to point towards the wind.
