16'-22' Boat Suggestions?

I'm looking for a small trailer sailer and like to hear opinions on their favorites. Our Xterra has a towing recommendation of <3500 lbs. I'm hoping to keep the package under 2500#. Shallow Draft < 2 1/2' Room for 2 + small child for a couple of days Easy to rig and launch by one person Prefer a stiff motion for my wife who is not crazy about heel What speeds can be expected of boats of this size? I've been considering: Catalina, Capri 18 Com Pac 16 or 19 Catalina 22 What would you choose? Anything that would fit the bill w/an unstayed mast?
