The added water ballast does little to affect the wetted surface but is sail to weight ration would be a bit different. The rotating wing mast is also a huge change. The hull shape is still not going to give you a good planing surface as compared to a properly designed tri-maran. There is also a lot of added weight with the amas and I am sure he had to beef up the structure of the boat to support the amas and the mast unit so he has pretty much negated the loss of the water ballast.
To me he added stability and possible sail area, but I bet his sailing weight also went up along with the wetted surface.
